В книге главное внимание уделено анализу современных космохимических данных по составу различных тел Солнечной системы. Показано, что они свидетельствуют о вполне определенных физико-химических процессах в первичном веществе, которые привели к формированию материала метеоритов, планет и Земли. Даны результаты термохимических расчетов, указывающих на образование твердых частиц из солнечного вещества, его конденсации и последующей аккумуляции в планеты. Рассмотрены различные факторы аккумуляции, влияющие на оболочечное строение Земли и планет земной группы. Описан вероятный процесс формирования ядра и мантии Земли. Возникновение алюмосиликатной коры, океана и атмосферы рассмотрено как результат процесса химической дифференциации Земли. Книга рассчитана на широкий круг геологов, геофизиков, геохимиков и исследователей метеоритов.

Foodservice Management

Foodservice Management: Principles and Practices(then titled Foodservice in Institutions) was first published in 1938. In each edition, the authors have been committed to presenting the basic principles of foodservice management, which can be applied to alltypes of foodservice organizations. This 12th edition continues to give comprehensive coverage of allaspects of foodservice management in one single volume. The early editions reflected the distinct difference that existed between commercial or profit-seeking organizations and noncommercial or institutional (on-site) not-for-profit foodservice operations. Special emphasis was given to on-site foodservices: schools and colleges, hospitals and health care facilities, and in-plant or industrial foodservices. In recent years, a philosophical change has taken place—first gradually, then dramatically—in the management of many not-for-profit, on-site foodservices. With rising health care costs and the pressures of health care reform, for example, hospitals have become more financially competitive in order to succeed and remain in business. Notfor-profit cost centers, such as patient meal services, exist alongside retail profit centers, such as cafeterias, vending, and coffee bars, in hospitals. Schools, too, are under pressure to implement self-sustaining Child Nutrition Programs by offering revenue-generating options such as à la carte lines and catering services. Today, most foodservices strive for some margin of profit and make less of a distinction between the two types of foodservice. In response to these changes, the title of this book was changed with the seventh edition to Introduction to Foodservice.

Foods Experimental perspectives

This revision has been updated to include new information pertinent to each chapter, ranging from the food scene and marketplace to the spectrum of foods and the science that forms the basis for their handling and preparation. Particularly extensive revisions occur in Chapters 1, 12, and 16. The sequence of chapters has been altered significantly, with the research chapters being placed following the parts discussing the science of food. Space limitations make it impossible to include background information that usually is included in an introductory class. Безопасное и бесперебойное движение поездов в значительной мере зависит от исправного состояния вагонов в эксплуатации. Тележки, являясь основной частью вагона, по сравнению с остальными частями, работают в самых неблагоприятных условиях, воспринимая жесткие удары и толчки значительной силы особенно при прохождении поезда по кривым участкам пути и стрелкам. Поэтому детали тележек в большей мере подвержены износу и требуют тщательного осмотра при периодическом ремонте и в эксплуатации.
